Sorghum: Gluten free, with a hearty texture and mild flavor

 

Quinoa: Gluten free, and packed with protein

 

Wild and brown rice: Also gluten free

 

Buckwheat, amaranth: actually a seed/fruit. 

 

Couscous: Made from durum wheat. Contains gluten.

 

GREENS

Arugula, kale, sprouts, microgreens.

Black beans, garbanzo beans, lentils, tofu
